Getting together with friends and having a potluck is a popular activity when you’re camping. It’s the time to share time and resources while feeding a lot of people at once. There are some things you can do to make sure the cold food stays cold and the hot food stays hot so the meal remains a big success for all.
Storing – Much of your camping food will be kept in a cooler. Since cold food should stay below 40°F. Use plenty of ice or freezer packs in your cooler to keep food at the proper temp. If you have raw meat be sure to wrap it separately so that it doesn’t come in contact with other foods. Wash all your fruits & veggies before putting them in the cooler.
Prep – If you’re marinating meats, keep them in the fridge or cooler until you’re ready to cook them. Don’t reuse the marinade on any other foods. You can use hot plates or crockpots to keep food warm as it sits on the table. Your warm foods should be at a temperature higher than 140°F.
Serve – Place salads and fresh food bowls in a larger container that is lined with ice. Use those heat sources mentioned above for the warm foods. Try not to leave food out for longer than two hours and put it all in the fridge or a cooling source to store.
